Once Bar Heist is open, it updates the iPhone location to a server which can be accessed from anywhere in the world. Additionally, automatic emails (every 10 mins) can also be setup to update owner of the phones location.
The applications design is to deceive the user of its actual purpose, so the thief doesnt have a clue.
